Hace milenios, en fogones de la costa y la sierra del Perú arcaico, el almuerzo ya llenaba el día. Mañana en la costa: mejillones y lapas en la roca, pez atrapado cerca de la orilla, a veces un lobo marino. Humo y conchas junto a la choza. En Paloma, casi toda la biomasa animal estimada viene del mar. En Jaguay y Tacahuay, pez, marisco y aves marinas llenan los fogones del Pleistoceno final y del Holoceno temprano. El sabor del día era sal, humo y concha abierta con lasca.

Mañana en la sierra: seguir vicuñas, compartir huesos asados de médula alrededor del fogón interior, juntar semillas, frutos de cactus o tubérculos silvestres cuando hay. En Pachamachay hay semillas carbonizadas; en Cuncaicha, hueso de camélido y taruca quemado y partido. Isótopos de altura muestran dietas mixtas con plantas sustanciales, no solo carne. El frío pide calorías; el fogón las reparte en círculo.

No hay un menú único para todo el Perú arcaico. Cada región comía lo que su estación y su ecología daban. Algunas personas probaron ambos mundos al caminar entre costa y sierra.
