Version 1

El maíz nació de un pasto cuidado —el teocintle— que poco a poco dio mazorcas más útiles. El chile y el frijol se sumaron en sus propios calendarios: no llegaron juntos como un trío cerrado un mismo año en todas partes. Cada planta tiene su biografía, y conviene respetarla.

Las comidas tempranas mezclaban lo silvestre con parcelas pequeñas. La tortilla como base diaria es intensidad más tardía. El chile daba sabor y ayudaba a conservar; las piedras de moler —antepasadas del molcajete— importaban para la especia. Estudios genéticos sitúan al frijol común en el occidente-centro de México, distinto del hogar balsense del maíz.

Hacia tiempos de aldeas tempranas, maíz, frijol y chile aparecen más seguido en basureros… junto a pez, venado, calabaza y frutas. En cuevas altas se ven mazorcas; en tierras bajas, señales minúsculas de plantas; los tiempos no siempre coinciden, y eso es parte de la verdad que contamos a la escuela.

En la olla hierve un caldo sencillo: algo picante, algo dulce de calabaza, un trozo de carne o pez. Alguien prueba con cuidado y sonríe. Así se comía el mañana que aún no era imperio: con paciencia, variedad y respeto por lo que la tierra daba sin pedir un solo nombre de rey.

Después de la cena, alguien guarda chile seco y frijol. El futuro se guarda en jarras y en la memoria del gusto.
