Version 1

Hace unos tres mil años, en fogones de San Lorenzo y sus orillas, en el sur de Veracruz, en el Golfo de México, el aire mezclaba olor a pescado asado, frijol y maíz. La dieta del Golfo era rica y variada: no todo era mazorca desde el primer día. Había frutos, raíces, mariscos, caza menor. El maíz brillaba también en el símbolo —hachas verdes, seres de la planta— aunque las calorías vinieran de muchos platos compartidos en el patio bajo la sombra.

En contextos tempranos de San Lorenzo quedaron huellas químicas de bebidas de cacao: un capítulo antiguo del chocolate, espumoso y ritual, lejos de la barra dulce de hoy. Élites y fiestas alzaban esa bebida oscura; ríos llevaban sal, vasijas y bienes de prestigio hacia socios de costa y montaña. Comer juntos era también pactar y celebrar el ciclo del agua.

Imagina la vasija que burbujea, el labio que prueba lo amargo y lo sagrado, el niño que espera un pez en la red mientras el humo sube recto. Comida, fiesta y fe crecieron juntas. El Golfo alimentó cuerpos y relatos; el cacao viajó en la memoria mucho antes de volverse fama mundial. El sabor del río y el sabor de la milpa se daban la mano en cada fogón.
