Hace unos diez a ocho mil años, en cuevas secas de Oaxaca y en valles como el de Tehuacán, en el centro-sur de México, la gente empezó a cuidar plantas útiles cerca de sus campamentos. La calabaza —con cáscaras más gruesas y semillas más grandes que las silvestres— muestra señales claras de selección humana en Guilá Naquitz; en Coxcatlán también hay fechas directas algo más recientes. Manos pacientes elegían lo mejor temporada tras temporada.

Las calabazas-botella servían como recipientes tanto como alimento: guardar agua o semillas era un tesoro bajo el sol. Cuidar no significaba dejar de cazar y recolectar; durante milenios ambas cosas caminaron juntas. Cada planta entró al cuidado humano en su propio tiempo y lugar: la calabaza temprano; el maíz y el frijol, más tarde y por caminos distintos.

Las cuevas secas conservan cáscaras y semillas que la tierra húmeda destruye; por eso a veces parece que «todo empezó» en la sierra, cuando también hubo experimentos en bosques estacionales y otras regiones. No hubo una revolución de un día ni un regalo mágico de cultivos que cayera del cielo.

Huele a hoja y a fuego de campamento. Alguien abre una cáscara, mira las semillas y sonríe: el mañana cabe en la palma de la mano, y la paciencia es el mejor instrumento.

En la boca de la cueva, el viento trae olor a tierra mojada. Nadie corre: el cultivo empieza como una conversación lenta con la planta.
